As a workaround, you can hold the Shift key and use the arrow keys to expand the selection.
Selecting with the mouse is often a challenge in table cells, as you have noticed. The explanation is that you have inadvertently added the end-of-cell marker (¤) to the selection, which will result in the whole cell being selected.
