Saving as PDF ruins my document

I just finished working on a lab report for school and I have to export it as a pdf. The problem is anytime I do export it, the tables become skewed, the paragraph spacing changes, and one of the citations losses a letter for whatever reason. I know that some pdf applications are to blame for this, but for some reason this also affects my word document at the same time. If I undo once it goes back to normal. In that undo button though is the words 'Update Fields', so I assume that's what it has to do with. I've tried saving copies, sending it to other computers, using other pdf converters, but the result is still the same. I'm using the word version that comes along with the Microsoft 365 apps for Enterprise, and I'm running on windows 10. Any help would be much appreciated.
