Is it possible to resize a session host VM, just increase its CPU and RAM? I'm not sure if there's a special way of doing that if it's a WVD or if it's any different than just another VM (shut down, resize, turn back on..)?

Yes. We have resized session host VMs many times without issue. You will, most likely, want to make sure you resize all session hosts in a host pool to the same size.
