Hello,

I'm a bit confused about what editions from Windows Server exist. I read about 20H1 etc. Can someone explain this?

There are two definitions 

 

Build number: the 20H1 you mentioned is the build number and it is an update for all editions of Windows Server and it contains new features and fix and it is recommended to update all Windows Servers to the latest build, take a look at Windows Server release information | Microsoft Docs 

 

Editions: It is like Data Center, Standard,... and it has features based on your requirements , take a look at Windows Server 2019 Licensing & Pricing | Microsoft
