It Still shows version 1903 (19H1) while version 1909 (19H2) is currently in the Release Preview ring and I am on Fast ring version 2003 (20H1)

normally I expect it to show 2003 or at least 1909, Not 1903.

It will most likely remain that way until just before release in 20H1.

20H1 has been in the skip ahead/fast ring since stable build 1809.
before 1903 became stable, 20H1 users would see 1809 as their Windows version, after 1903 became stable, 20H1 users started seeing 1903 as their Windows version. so my guess is that after 1909 will become stable, 20H1 users will start seeing 1909 as their Windows version.

Finally changed to 2004

according to Microsoft:

as of this build, 20H1 officially shows it is version 2004. We have chosen to use 2004 as the version to eliminate confusion with any past product names (such as Windows Server 2003).
