Unable to Uninstall windows 11

I tried to uninstall windows 11 by recovery to previous build but it take me to Windows 11 again then the option is not available to go back . I need to keep all my APP.

In Windows 10, I create a recovery media in my NAS witch is xxx.vhdx , how can I install it?

If you've used 'Go back to Windows 10' option once, I am afraid if it is available again. Can you confirm, if you've previous Windows version files, typically the Windows.old folder?
