How to stop win 10 from tracking your email

I do not want windows 10 or 11 tracking my email. I installed my computer as a network computer and on set up it asks for my email anyway. I decline. But the first time I use my email for any windows app and some third party apps, it then records my email as being tied to this computer. They have no need to be tracking my computer via my email. Is there a permanent way to restrict my email to only the apps I used it with when I need to use it without MS monitoring my business?

Thanks for sharing, unlink the Microsoft Email in the "linked accounts" in settings and then when it asks the question again.

There is a option that will let thee click "only for this app".
