PaaS is the Platform as a Service. However Windows 365 is SaaS software as a service because you have a installed version of Windows on the cloud. What information are you looking for?
Reza is correct and asks a great question, I'd be interested to know also if you can share. Another way of thinking about W365 is comparable to thinking how Exchange Online is to an Exchange (on-prem) deployment.
