Unusable OS when turning on 32:9 monitor

Hello !
I'm trying to figure out an issue have since I've installed W11 sometimes ago. It's very weird, not sure what is the source of it, but I know how to reproduce it consistently.
I have a setup where I have an 5120x1440 screen (C49RG9x) and a side 1920x1080 screen.
If I bootup W11 without turning on my 5120x1440 screen, and turning it after booting up, the computer become completely unusable, as if the Echap key was firing constantly.
Here is a video example
Turning off the wide screen again will stop the issue occurring. Turning it back on make it start again.
So to have a usable computer, I need to make sure that the screen is turned on before booting the pc.

Also, if wake up the computer from standby mode, it could rarely trigger this issue (like 1/20).

I don't see anything in event viewer, I tried killing services around, I don't see any weird activity in task manager, updated everything I could (programs, drivers, etc). I'm starting to get a bit desperate.
Did something already had this issue ? How would you try to track this issue ?
Is there any way to know if a program somewhere is flooding with an Echap key ?

Thanks for your help :)
