Right now, Windows 10 Enterprise LTSC 2019 available since 11/13/2018

Regarding the tables in the above document, the "OS Build" columns show the latest stable OS builds contained in the iso files in the MVS channel. Right?

No the ISO file is not always up to date, when you grab the ISO file from Microsoft website, after installation you have to check Windows update to receive the latest cumulative update.

Is there a constantly updated document indicating all the stable builds of Windows 10 20H2 and LTSC 2019 contained in the various isos produced by the MVS channel?

you can find the first build number of each version on the same website i gave you, at the bottom of each table.

 

ISO files are most likely using the same build that was first released for each version. so these same numbers should correspond to the build number of ISO files.
