The recording will capture what the attendees see in the meeting, and currently that includes both video and audio only participants (avatar). We have an upcoming feature called "manage what attendees see" which would allow control over what the attendee sees in the event - once that is implemented, the recording would only capture what you show to the attendees.
This feature is slated for end of calendar year 2022/early calendar year 2023 for release.
