Anyway to Modernize Surface Hub V1

Is there anyway to get all the new software features of the Hub 2 on the v1?

Surface Hub V1 should receive the 20H2 update automatically. However, several prerequisites are in place for V1 devices to receive the update and we have seen that some do not complete the process and therefore will not be offered the update. In this case, the solution would be to use Surface Hub Recovery Tool and re-image the device with the new OS build (20H2).

@Cezar Cretu it appears my surface has that update. It just seems some features are not available such as coordinated meetings, etc. Will any of this come to the V1 of the hub?

Coordinated meetings needs to be configured first as described in this article. What other features are you looking for?

One easy check is in Options - This device - Calling and Audio. If you have a dropdown list to chose your favorite calling app, then you're on the 2020 update.
