Is it doable or supported to have two enterprise pools paired that are part of the same forest but in different child domains?

Hi Adam,
It is possible with different child domain. Pool pairing must be in the same forest and same sip address. Also it must be the same Edition (enterprise or standard) see more information on: https://technet.microsoft.com/en-us/library/jj204697(v=ocs.16).aspx
