Set open in App as default for all sites

Hi all,

I know how to configure this per site, but how can I configure SharePoint so that documents open in app by default on all our SharePoint sites, including ones that we are yet to create? It's a little tedious to do this site by site, so hoping there is a global setting new sites will inherit from.

I am running in this same problem and most scripts provided either are not working or using outdated code.
