Hi,

Before asking our SharePoint admin to deploy it, I would like to explore Microsoft Learning Pathways. Is there a demo installation so that I can see Pathways in action?

You can create your own demo and development enviroment to test what ever you want here:
https://developer.microsoft.com/en-us/microsoft-365/dev-program

As long as you develop and try stuff on it, it will live on :)
