How to change the sublink of this button

Can I change the sublink of this button that is in the header?

@Pimentellog There is no SharePoint out of the box option to change the hyperlink of "SharePoint" heading in the ribbon at the top.

Workaround (Not recommended):

You can inject custom JavaScript on SharePoint online modern pages using SPFx application customizer & change the hyperlink of "SharePoint" heading.
