HELP! SharePoint Online Content Type List for New Items Missing

I created a site about a month ago that leverages a list in the modern experience to enable a user to select from a list of 'content type' forms by selecting 'New'.  By selecting a content type from the 'New' list, a form would display with only the fields needed for that particular content type (e.g. new hire versus address change).  This morning, our UK users informed us that the form no longer enabled them to select from a list.  They are now taken directly to the default form.  When they try to change the content type on the form, the fields do not update based on the selection.  Our company is in the process of converting our onprem SP sites to the cloud.  My site was one of the betas.  Could it be a setting was changed by our IT admins? If so, what setting so I can ask them to change it back. Any other guidance on how to fix would be greatly appreciated.
