Employee Onboarding List

I've just been looking at the Onboarding template for SharePoint, which seems like a great idea.


However, the onboarding checklist web part is confusing me, as I don't see how this is to be used for multiple users? If one person edits an item, then everyone can see this or nobody can see anything at all if you use the permissions for them to only see/edit items they created.


Do I need to create a whole new workflow in order to setup a new template for each new staff member?

This the way Microsoft Lists lists work, the workaround could be to craete a Power App that uses the list as data source and where you can have different roles working with the list data
