eDiscovery files of SharePoint online how to extract after download

I have about 100,000 files to recover.  I did a ediscovery download about 700gb worth. 

I did a move from one library to another and now lost the whole library.  Some are in the recycle bin, but I can only recover a 100 at a time, so I went the ediscovery route.

 

Problem is there are xml and CSV files and data I do not know how to extract.  How can I see all the files downloaded?

 

Is there a tool to use to extract the data?  If I would have exported to PST file would I have to use Desktop Outlook to retrieve the files?

Found out that ediscovery is not able to retrieve items in recycle bin.
