Document Library columns not working in copied Word Template

I'm having some trouble with a document library in Sharepoint Online and Word Templates

I have one site that I created some templates in and using the Document Properties in the Quick Parts for Word I was able to show the fields in the Sharepoint list and this is working fine.

 

However when I try and use the same templates I need to replace the fields in the Word template in order to get the fields to line up.

 

For example in the template I have field called Reference Number and in my Document Library I have a field with a matching name, but it doesn't update in the Document Library

Is there a way to match up the fields with out re-creating the templates?
