Dear Team,

I would like to build a simple platform, for people to pick up audit question from question bank and create it as a checklist.

Auditor may enter some audit finding in the audit checklist and later the checklist need to signed off by auditor and auditee.

Is sharepoint a suitable tools to create such workflow?

SharePoint/O365 is a great platform for process automation. You can easily set up approval workflows using SharePoint lists and Microsoft Flow!
