Hi
Is it possible to have subsites within a site and therefore be able to provision those subsites as well as the site itself using Get-SPOProvisioningTemplate and Apply-SPOProvisioningTemplate ?
If not, what is the way forward for provisioning subsites within sites.

Hi,
It's only possible using custom extensibility provider for provisioning engine. OOTB Get-SPOProvisioningTemplate and Apply-SPOProvisioningTemplate are working with single web at a time. So you should iterate through all subwebs and Get-SPOProvisiongTemplate for each of those, then recreate the site structure and Apply-SPOProvisioningTemplate to each created subweb.
