Question:
Do we have a Limit
a) Azure IP / AIP -> Label and Sublabel
b) Unified Label -> Label and Sublabel
Example:
AIP -> 50 Labels and per Label a maximum with 25 Sublabels

Hi AFAIK you cannot have more than 500 labels that apply protection in the tenant. For more information see:
You can create any number of labels. However, when they start to get too many for users to easily see and select the right label, create scoped policies so that users see only the labels that are relevant to them. There is an upper limit for labels that apply protection, which is 500.

Thank you very much!
It was only a Question how many. I know, that for example more than 8 and 5 Sublabes are definantly enough for a user. Best practise in my view is 3-5 labels and 0-2 Sublabes.
