Am unable to change video file association to my default app (PotPlayer) or any other playback software. I have to select "open with" then choose the application each time. No video files are listed in the choose by file type either, they seem to be missing from the list of file types.

I am having this issue also, but with VLC.

I at first thought that maybe there was a problem because of the transition from Windows 10 to Windows 11, so I re-installed VLC from scratch, making sure that I set the correct filetype associations during the installation process.

Still, every time I double-click a video file, I am asked which program I want to use to open it, with to checkbox option to "Always use this app..." as with Windows 10.

Very annoying.
I am also having this issue with VLC - cannot change certain file types (AVI, MPG, MPEG). These file extensions simply are not listed.

I tried to change the file association through VLC's "set file association" but it referred back to Windows 11 Default Apps.
