Outlook 16 - Signature formatting Question

I'm trying to build a pretty fool proof signature in Outlook and I'm getting some variance in layout and alignment depending on email platform/ mobile etc.

My layout appears in Outlook as below:

I'm using Tables for this, and am frustrated in the variablity of some of the alignments that appear to be locked in within the table settings. Things tend to appear like this:

Is there anything I'm missing here? Is there any techniques that will make this more buttletproof?
