Setting up a specific time or date for OneDrive to make a backup, like every week once, isn't a built-in feature of OneDrive on Android, so far I know. However, you can use a workaround involving your device's settings or third-party applications.
Two popular apps for this purpose are Tasker and Automate, but I'm not sure if these exactly meet your requirements.
