We have a special group email here. We would like all users that use this email in there outlook that when they send form that account it goes into the group sent folder not the personnel folder? How can we do this without rules?

Refer to the article given below. You can achieve this either by editing the registry Key or from Exchange Admin Centre.
Remember It is not possible for Distribution List/Contact Group, It is possible only in Shared mailbox.

Neither of these methods supports Office 365 Groups afaik.

My bad, I know that there is a shared mailbox connected to an O365 Group, though did not noticed that there is no way to see the sent items folder of an O365 group.

So none of the ways will work? Is there something else?
Or do the need to use rules? Is there anything like silent rules the user can't control or see?

The problem is that you are using Office 365 Groups, which are very limited in terms of "mailbox" functionality. You can use a shared mailbox instead, as suggested above.
