Is there a difference between private and shared chnnels in terms of apps that I can use?

I can use OneNote, Lists and other SharePoint related stuff besides Tasks on both of them right?

Yes, true. Shared channels support tabs except for Stream, Planner, and Forms. Bots, connectors, and message extensions are not supported.

Private channels support connectors and tabs except for Planner and Forms, possibly Stream now. Bots and message extensions are not supported.
