Guest Join

When you Join as a Guest/Outsider in a Teams meeting from Desktop client(my client is on different Tenant than the Meeting Host), is the conversation history stored on the Tenant which initiated meeting; will as a Guest on my Teams client there will be any Meeting history stored

The meeting conversation is stored in each user's Exchange for eDiscovery purposes. https://docs.microsoft.com/en-us/microsoftteams/security-compliance-overview

So your tenant should have some information stored about the meeting. If I understood your question correctly.
