In Outlook, I am able to create a calendar event and set the "Show As:" on each event. For example I can block an area of my calendar set the "Show As:" to "Out of Office" or "Working Elsewhere".
When creating a calendar event in Teams I can't seem to find this function.

Not supported afaik, as are many other Calendar-related features. Think of Team's implementation as a minimum-viable product, if you want to "full" calendar experience, use Outlook.
