Documents on a private channel

We are looking to move to Teams, and was wondering if the private channel is deleted, can we still get to the documents?  Or does the sharepoint site get deleted as well?  We are looking to setup channels for projects and will need to keep at least the documents, but will need to delete the channel once the project is done due to limitations of private channels in a team.

I think this might answer your question

"If a private channel site is restored and it's beyond the 30-day soft delete window for the private channel, the site operates as a standalone site."

Also I can confirm that, when you delete a private channel, the private channel site goes to delete sites and you can restore it using Restore-SPODeletedSite

so you would have to add that to the procedure when removing the private channel
