I would like to have a small meeting with a few team members in a channel. I want the meeting in the channel so that it is *visible* - but I only want to invite the people I specify. I do not want the invitation to show up for everyone else on the team (aka everyone else in the same office 365 group). Why doesn't Teams accommodate this? Do you not forsee huge issues with inviting hundreds of unwanted attendees to every meeting created in Teams?

I think you are referring to the ability to have private channels. We are actively working on this, but you should weigh in on user voice. In the meantime you can have private meetings in Teams. https://microsoftteams.uservoice.com/forums/555103-public

to avoid this, you can also use the scheduled meeting functionality in Microsoft Teams, where you can setup a meeting from within Teams.
Please goto the meetings icon on left rail and click on schedule a meeting.
