IOS VVP Bloatware Removal

I've recently setup Apple Business Manager and started pushing out apps via VVP, however the iOS devices come with a heap of bloatware e.g. maps, stocks, translate etc.

Is there any way of removing this during the enrolment process or does it need to just be manually deleted off the iPad?

There is not really a bloatware remover like you would have on Windows. You can restrict apps (with a approved or prohibited list, in your case you would use a prohibited list of bundle id's) but this means users are not able to 're-install' the apps if they like to use it. I do not think this is what you like to achieve. You can find more info here: device-restrictions-ios

You could create a homescreen layout to make the homescreen less cluttered while keeping and allowing the apps on the device, you can find more info here: ios-device-features-settings
