Bitlocker and testing

I have enabled bitlocker. Now, let us assume that the laptop has been stolen. Now, how do I create this scenario on my laptop and how to see that bitlocker is working and how to test it?

Any method or ways that we could test it. I am doing this for Hybrid Azure AD Joined device. The Recovery key is there, next what?

1. physical device: get the hard drive connect to another device try to get its content
2. if that's a vm , detach the disk from the vm, attach to another VM (OS) try to access the disk you've added.
