I want from the Microsoft 365 Defender panel to create exceptions on one or more computers, that is, so that the antivirus does not scan elements that have been excluded in the exclusion list, but I cannot find that option or if it is possible

You can create AV exclusions by using the File Indicators in the portal (based on hash value of excluded files) or you can use the exclusion configurations offered in GPO/Powershell/Intune
