setting up a calendar to support a custom Butcher Shop

We would like to use Bookings as the primary means to do our scheduling for our custom meat processing business. A couple things have come up and I have not found very good work throughs. 


1) How can we have it where a person can drop off their animals anytime between 8 AM and 5:30 PM?


2) How can I have someone utilize multiple slots (aka they are bringing in 3 cows) without going over my daily limit and overworking my crew?


Attached is the spreadsheet that we use but it really bogs down my excel so I would like to pivot to a native Microsoft App if I can.
