Microsoft bookings

I may be missing a simple step, however I have set up our organization on bookings. We have some services that are only available on certain days, yet you can manually book anytime, regardless of staffing availability. The Service option shows the limited availability as set, however I could book an appointment at 2 am if I wanted, which is clearly not the point of the program. Can someone help with the missing step?
