Hello, we want to rollout Microsoft Booking for the HR department to schedule interviews with potential candidates. Because we want to avoide fake bookings, we want to allow external users to book one time slot only. Is it possible to restict booking amount of time slots for one customer/e-mail address? Any tips or workarounds are welcome! Thank you!

@DianaPio Bookings does not support restriction on the number of appointments a user can book.
You can validate the user email by enabling OTP verification though. There is no easy workaround available for this without manual intervention of disabling the service.
