Individual Calendar availability for staff members

I'm in the process to setup a booking page for a set of services for my customers. To each service we have one or more staff member associated.
Outlook calendar free/busy information is not feasible to use therefore on Default Scheduling Policy we set the General Availability to "Not Bookable" and we started to enter our individual availability to use the "Availability during these dates".
Each individual staff member has his own availability schedule.
Unfortunately we are unable to set individual availability for each individual staff member as the avalailability set on Default Scheduling Policy pane encompass all staff members.
Am I wrong somewhere? Are there any chances to define a custom schedule for each individual staff member?
