How to set a booking service with start and end times

While looking at the Calendar view in Bookings, I can create a booking for a service with Start and End times.  But on the Bookings page, I can't find a way to do that.  It seems to be locked in to whatever duration you set when creating the service.  Am I missing something?

As far as I know, you cannot specify a start and end time from the customer side of the booking page. There is a setting/preference to display specific increments to the customer. You can lower it to 1 minutes increments. At this time customers cannot set their own duration on the booking. I've created multiple services for varying durations .5 hour, 1 hour and 2 hours.

That's kind of what I thought the answer would be, unfortunately this means I'd have to create a service for each 30 minute slot in an 8 hour day.
