Exploring Microsoft Bookings for a training centre

Hi all, 

I am exploring the idea of using Microsoft Bookings for a Training Centre. 

We offer multi day courses, but I want to only allow bookings on the first day. I thought I could use the time increment, but it doesn't work as it is limited. 

So, we have a training session that runs from Monday to Friday, starting on Monday. I want people to be able to book only on the Monday
