Microsoft To do and Tasks - options for when employee leaves

Suppose we have a user that's using tasks in Outlook and assigning them to others or themselves, or using Microsoft To Do on the web to create tasks and lists of tasks to share with others.  When this employee leaves the company, how can I get to those tasks and lists of tasks from Outlook and To Do to see what they are, and how would I move them to another employee?
