I have set up the accounts of my AV guys with the Device Enrollment Manager role to enroll our Surface Hubs in Intune. If one of those accounts is disabled or is removed, does it break the device enrollment?

All existing machines Will be fine.
But they won't be able to enroll new machines when disabled
