there is a modern web parts in sharepoint online call as "stream" web part

currently it only support limited sorting option and most of them is not practical , check below screenshot.

If you go get the embed code from Stream, and paste it into the Sharepoint as an Embed block, you can see where is says sort="trending" at the end of the url in the code. Just change that to "name" and it will sort by name.
