Exchange/Office 365 Inbound Email Monitor Alerts

Hoping someone can help my scenario.  I'm looking for a way to monitor inbound email either from a connector or public IP address in O365.  Basically we have emails that route in every few seconds to our tenant based off a connector and it comes from one of 3 public IP addresses that our Exchange servers use.  I'm looking for a way to generate an alert or notification if we stop receiving email from that connector.  Basically we are trying to catch mail delays coming into Office 365.  For example if no activity happens on that connector for 5min, an alert is triggered and sent to us.  Hopefully this makes sense.
