Default Mail Profile - How to Configure?

Hello all,

I work for an IT department and we have users offshore currently set up using VM's through Citrix. At the moment, it's set up where a default profile is already configured, however the default profile contains the wrong server address for our exchange server. This causes at least 5-10 calls monthly having to go to control panel and add a new mail profile for autodiscover to correctly work. Where do I change the settings for this default profile created when a user is first added to AD?
