Question: why would I use offline address books? When on Exchange, we are always connected and so always have access to the "real" address book.. No? Am I missing something?

You are right - in a case like that - there is no point of using an offline address book.

But for example - If you have clients that are remote, have network connectivity only part of the day when they "sync up" with the server, send the email they created since last connection and receive new email, or if you have clients that use Outlook 2003 in Cached Mode (because of network connectivity issues between the client and the server) - then you need OABs.
