This might have gone unnoticed, but Exchange 2003 Online Help was updated for SP1 too.

This update includes additional topics that were not included on the product CD.

The Exchange 2003 Help is designed to assist you in day-to-day administration of Exchange. Use this documentation to guide you through Exchange features, tasks, and administration procedures. Does SP1 upgrade ADC connector when run on first exchange server? Should I recreate ADC connector after installing it? Because when I try to do cross site migration, I am getting a message says at least one of my Exchange Servers not running SP1 even they are...

SP1 does not upgrade the ADC on it's own. When you download the SP1, there is a folder in there that has the ADC in it. You need to run that setup separately on your ADC servers to upgrade the ADC to SP1 build. When Setup launches, just choose the "Reinstall" option and that will actually update the ADC on that box.
