When you select a single cell and sort, Excel will by default sort the entire "current region" of that cell, i.e. the largest rectangular range that has no empty rows or columns.
If you want to sort a single column in a range with data in adjacent columns, select that column before you sort. Excel will probably warn you. Choose to continue with the current selection.
