What is the proper function to subtract cells? Below are the instructions and excel spreadsheet. I needed clarification for step 12 on the word document. I have been using the function =SUM(B11-B21), my numbers are obviously coming out negative because B11 is a larger quantity. The final product on the word document does not show any negatives.

You just have them interchanged. Also, you shouldn't need the sum function

=B21-B11
